Method

  1. Whisk together instant oats, whole wheat flour, baking powder, ground cinnamon, and salt in a medium bowl.
  2. In a separate bowl, whisk together melted coconut oil, egg, and vanilla extract. Stir in honey.
  3. Add the flour mixture, stirring just until incorporated. Fold in raisins. Chill the cookie dough for 30 minutes.
  4. Preheat oven to 165 °C and line a baking sheet with parchment paper.
  5. Drop the cookie dough into 15 rounded scoops onto the prepared sheet and flatten slightly. Bake for 11 minutes to 14 minutes. Cool on the pan for 10 minutes before transferring to a wire rack.
