Healthy Banana Bread

  1. Preheat oven to 165 °C and grease a 23x13 cm loaf pan.
  2. In a large bowl, beat melted coconut oil and honey together with a whisk. Add eggs and beat well, then whisk in mashed ripe bananas and milk of choice.
  3. Add baking soda, vanilla extract, salt, and ground cinnamon, and whisk to blend.
  4. Switch to a big spoon and stir in white whole wheat flour, just until combined. Some lumps are ok! Optionally fold in mix-ins such as chopped walnuts, chocolate chips, or raisins.
  5. Pour the batter into the greased loaf pan and sprinkle lightly with extra cinnamon. For a pretty swirled effect, run the tip of a knife across the batter in a zig-zag pattern.
  6. Bake for 55 minutes to 60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for at least 10 minutes. Run a butter knife around the edges to loosen, then transfer to a wire rack to cool before slicing.
