Healthy Banana Bread
Ingredients
- 80 ml melted coconut oil
- 170 g honey
- 2 eggs
- 240 g mashed ripe bananas
- 60 ml milk of choice
- 5 g baking soda
- 5 ml vanilla extract
- 3 g salt
- 1 g ground cinnamon
- 220 g white whole wheat flour
- 75 g mix-ins

Method
- Preheat oven to 165 °C and grease a 23x13 cm loaf pan.
- In a large bowl, beat melted coconut oil and honey together with a whisk. Add eggs and beat well, then whisk in mashed ripe bananas and milk of choice.
- Add baking soda, vanilla extract, salt, and ground cinnamon, and whisk to blend.
- Switch to a big spoon and stir in white whole wheat flour, just until combined. Some lumps are ok! Optionally fold in mix-ins such as chopped walnuts, chocolate chips, or raisins.
- Pour the batter into the greased loaf pan and sprinkle lightly with extra cinnamon. For a pretty swirled effect, run the tip of a knife across the batter in a zig-zag pattern.
- Bake for 55 minutes to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for at least 10 minutes. Run a butter knife around the edges to loosen, then transfer to a wire rack to cool before slicing.
