Spicy Bean Burgers
Ingredients
- 1 slice bread
- 1 handful fresh coriander
- 400 g cannellini beans
- 400 g kidney beans
- 1 egg
- 0.5 onion
- 3 small mushrooms
- 1 chilli
- 1 tsp ground coriander
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp chilli powder
- 4 bread rolls

Method
- Blitz bread and fresh coriander together in a food processor to make breadcrumbs.
- In a blender, put cannellini beans drained and kidney beans drained with the breadcrumbs and egg. Blend together but leave chunky.
- Stir in onion finely chopped, small mushrooms finely chopped, chilli finely sliced, ground coriander, cumin, paprika, and chilli powder (or a few drops of tabasco) until combined. Dust hands with flour and shape the mixture into burger shapes. This makes 4 very large burgers or 6 smaller ones.
- Fry burgers in a pan on a medium heat until brown and hot all the way through.
- Serve burgers in bread rolls with ketchup and salad.
