Method

  1. Put garlic and chillies into a mortar and smash until broken into small pieces.
  2. Add lime juice, fish sauce, and palm sugar. Mix until the sugar dissolves.
  3. Add shredded green papaya, long beans cut into 1-2 inch lengths, tomato cut into quarters, and eggplant cut into quarters. Pound until the papaya looks soft and turns slightly brown.
  4. Top with roasted peanuts and serve with sticky rice or cabbage.
