Method

  1. Heat cooking oil in a wok over medium heat. Add garlic rough chopped and stir until fragrant and turning yellow.
  2. Add chicken and tofu diced, stirring for about 10-15 seconds.
  3. Break in egg and scramble, then mix everything together.
  4. Add rice noodles (soaked if dry) and water. Season with tamarind paste, palm sugar, fish sauce, oyster sauce, and dark soy sauce. Toss until noodles are tender.
  5. Add garlic chives cut into 1 inch lengths and bean sprouts. Mix everything well for about 5 seconds and serve.
