Add @garlic{5-10%cloves} rough chopped and stir until fragrant and turning yellow. Add @chicken{3-5%slices} and @tofu{1%small piece} diced, stirring for about 10-15 seconds. Break in @egg{1} and scramble, then mix everything together. Add @rice noodles{50%g} (soaked if dry) and @water{4%tbsp}. Season with @tamarind paste{1%tbsp}, @palm sugar{0.5%tbsp}, @fish sauce{0.5%tbsp}, @oyster sauce{1%tbsp}, and @dark soy sauce{1%tsp}. Toss until noodles are tender. Add @garlic chives{2-3} cut into 1 inch lengths and @bean sprouts{1%handful}. Mix everything well for about 5 seconds and serve. -- Top with chilli powder, roasted ground peanuts, spring onion or banana flower.
