Khao Soi
Ingredients
- 1 handful egg noodles
- 1 tbsp cooking oil
- 1 tbsp red curry paste
- 1 cup coconut milk
- pieces chicken
- 0.5 tbsp fish sauce
- 1 tsp sugar

Method
- Boil egg noodles for about 2 minutes, drain and set aside.
- Heat cooking oil in a pot over low heat. Add red curry paste and stir until fragrant.
- Add a quarter of the coconut milk and then add chicken big sliced. Stir together.
- Add the rest of the coconut milk and turn to medium heat. Season with fish sauce and sugar.
- Add the cooked noodles to the curry and stir for 5-10 seconds. Serve topped with crispy fried noodles, pickled cabbage, lime, chopped spring onion, coriander, and sliced shallot.
