Method

  1. Boil egg noodles for about 2 minutes, drain and set aside.
  2. Heat cooking oil in a pot over low heat. Add red curry paste and stir until fragrant.
  3. Add a quarter of the coconut milk and then add chicken big sliced. Stir together.
  4. Add the rest of the coconut milk and turn to medium heat. Season with fish sauce and sugar.
  5. Add the cooked noodles to the curry and stir for 5-10 seconds. Serve topped with crispy fried noodles, pickled cabbage, lime, chopped spring onion, coriander, and sliced shallot.
