Cabbage Shiitake Udon

Method

  1. Heat sunflower oil in a wok or large frying pan over a medium heat. Once hot, add onion thinly sliced and fry, stirring often, for 5 minutes until it starts to soften and become burnished at the edges. Tip in savoy cabbage quartered, tough stalks removed, shredded and shiitake mushrooms sliced and stir-fry for 5 minutes more.
  2. Pour in soy sauce, mirin, and Japanese rice vinegar along with fresh udon noodles. Stir well. Once the noodles are warmed through, take off the heat.
  3. Divide between 2 plates, scatter over fresh root ginger cut into matchsticks and sprinkle with sesame oil.
