Sticky Rice Mango

Method

  1. Cook sticky rice by steaming (soak overnight first).
  2. Heat coconut cream in a small pot over low heat. Add salt and brown or white sugar, stirring until dissolved.
  3. Mix the sweetened coconut cream into the cooked sticky rice and keep warm until the cream is fully absorbed.
  4. For the topping, mix rice flour and salt into coconut milk. Heat over low heat for about 1 minute, then allow to cool.
  5. Serve the sticky rice with fresh mango slices, drizzle the topping over, and sprinkle with deep fried mung beans.
