Vegetable Cajun Traybake
Ingredients
- 1 red onion
- 1 courgette
- 500 g sweet potatoes
- 25 g walnut pieces
- 1 tbsp Cajun seasoning
- 1 tbsp olive oil
- 2 tbsp honey
Cookware
- oven
- large roasting tin
Method
- Preheat oven to 200°C.
- Place red onion cut into chunks, courgette halved and cut into thick slices, sweet potatoes peeled and cut into chunks, and walnut pieces roughly chopped in a large roasting tin.
- Mix Cajun seasoning, olive oil, and honey together, season, then drizzle over the vegetables.
- Roast for 30 minutes until the vegetables are tender. Divide between plates and serve with your favourite green veg.
