Tom Yum Kai
Ingredients
- 250 g water
- 1 stalk lemongrass
- slices galangal
- 1 kaffir lime leaf
- chillies
- 0.5 onion
- pieces chicken
- 1 handful mushrooms
- 1 tbsp fish sauce
- 0.5 tsp sugar
- 1 tbsp lime juice
- 1 spring onion
- 1 coriander

Method
- Bring water to a boil in a pot over medium heat.
- Add lemongrass diagonally cut, galangal, kaffir lime leaf stem removed, chillies crushed, and onion big sliced.
- When fragrant, add chicken cut into bite-size chunks.
- Add mushrooms and season with fish sauce and sugar.
- Squeeze in lime juice and top with spring onion rough chopped and coriander rough chopped.
