Massaman Curry
Ingredients
- 1 tbsp cooking oil
- 1 tbsp massaman curry paste
- 1 cup coconut milk
- pieces chicken
- 0.5 onion
- pieces potato
- 1 tbsp fish sauce
- 1 tbsp tamarind paste
- 1.5 tsp sugar
- 1 star anise
- 1 seed cardamom
- 1 stick cinnamon
- 1 bay leaf

Method
- Heat cooking oil in a pot over low heat. Add massaman curry paste and stir until fragrant.
- Add a quarter of the coconut milk and then chicken cut into big dice. Mix together.
- Add the rest of the coconut milk, then add onion cut into big dice and potato cut into big dice.
- Season with fish sauce, tamarind paste, and sugar. Simmer until the potato is cooked through.
- Remove from heat and top with star anise, cardamom, cinnamon, and bay leaf.
