Method

  1. Heat cooking oil in a pot over low heat. Add massaman curry paste and stir until fragrant.
  2. Add a quarter of the coconut milk and then chicken cut into big dice. Mix together.
  3. Add the rest of the coconut milk, then add onion cut into big dice and potato cut into big dice.
  4. Season with fish sauce, tamarind paste, and sugar. Simmer until the potato is cooked through.
  5. Remove from heat and top with star anise, cardamom, cinnamon, and bay leaf.
