Green Curry
Ingredients
- 1 tbsp cooking oil
- 1 tbsp green curry paste
- 1 cup coconut milk
- pieces chicken
- 1 sweet eggplant
- balls pea eggplant
- 1 tsp sugar
- 0.5 tbsp fish sauce
- leaves sweet basil
- kaffir lime leaves
- spur chillies

Method
- Heat cooking oil in a pot over low heat. Add green curry paste and stir until fragrant.
- Add a quarter of the coconut milk and then chicken big sliced. Stir until the chicken turns white.
- Add the rest of the coconut milk, then add sweet eggplant big sliced and pea eggplant.
- Season with sugar and fish sauce.
- Add sweet basil, kaffir lime leaves, and spur chillies diagonally cut. Stir for about 5 seconds, remove from heat, and serve with rice.
