Method

  1. Heat cooking oil in a pot over low heat. Add green curry paste and stir until fragrant.
  2. Add a quarter of the coconut milk and then chicken big sliced. Stir until the chicken turns white.
  3. Add the rest of the coconut milk, then add sweet eggplant big sliced and pea eggplant.
  4. Season with sugar and fish sauce.
  5. Add sweet basil, kaffir lime leaves, and spur chillies diagonally cut. Stir for about 5 seconds, remove from heat, and serve with rice.
